How to Obtain Pure Cow Ghee from Indian Breeds like Gir Cow
The Gir Cow, a revered breed of Indian cow, is fed a nutrient-rich diet consisting of Jau, Kapas Seed, Coconut, Til, Makka (Corn), Matar Dal, Gehu Chapad, Jawar Kutti, Rachka, and several other herbs. Whole milk is boiled and converted into Yoghurt (curd) overnight. In the morning, this yogurt is turned into buttermilk, which is churned to produce Butter (Makkhan). The butter is then warmed in iron vessels to yield this rare, nutritious ghee. The leftover product is simply buttermilk, with no milk left to be sold again.
Desi Cow Milk vs Jersey Cow Milk - A1 Milk vs A2 Milk
The milk from Desi cows like Gir Cow contains A2 proteins, which are highly beneficial for the body, unlike Jersey Cow Milk, which contains compounds that may contribute to various health issues, often referred to as a “basket of diseases.”
To obtain 1 kg of 100% Pure Cow Ghee, about 40 liters of Gir Cow Milk are required. The cost of 1 liter of milk is around Rs 90, making the cost of producing this desi ghee higher due to manufacturing charges, taxes, and delivery charges.
